It is French cuisine without a doubt but it is also intimately cosmopolitan.
After many journeys (in Asia, the Middle East and North America), I realised that traditional local cuisine is not an end in itself but a starting point.
Meeting people who are passionate about their regions, such as Emile Jung, Jean Albrecht, Fernand Mischler or Jean-Pierre Jacob, has taught me to channel all the ideas collected here and there into creating my own cuisine.
